 ## Why a dish can taste flat If a soup, sauce or bowl of vegetables tastes dull, first check whether it needs salt. Lemon juice and vinegar add sourness; in a small amount, you may notice the whole dish more than the lemon or vinegar itself. Acid does not remove fat or replace salt: it changes how the finished dish tastes. ## Try a small amount first 1. Put a spoonful of the finished food in a separate bowl. Add a few drops of lemon juice or vinegar and taste it beside the unaltered dish. 2. If the sample tastes brighter, add a small splash to the main dish, stir well and taste again. For a pot of soup, start with about one teaspoon; the right amount depends on its size and ingredients. 3. Stop when the food tastes balanced. If the sour ingredient dominates, you have added too much; dilute with more of the original dish if possible. This side-by-side test helps you avoid changing an entire pot before you know whether acid suits it. ## Match the ingredient to the food Lemon works well with vegetables, soups and fish; lime can suit a bean dish or a curry. Wine vinegar can enliven a dressing or a rich sauce. Tomatoes and yogurt also bring acidity, but they add their own flavors and texture. These are starting points, not fixed pairings: choose something that fits the dish you actually made. ## Ingredients to keep on hand - Lemon or lime juice for a fresh, citrus note. - Wine vinegar for a sharper accent.
